Peel fresh ginger root and slice it into thin rounds, about 1/4 inch thick. You can use a vegetable peeler or knife to remove the skin. Fresh ginger is more potent than dried, so use quality ginger for best results.

Cut fresh lemons into thin rounds, about 1/4 inch thick. You can leave the skin on for added nutrients and flavor. Use organic lemons if possible to avoid pesticide residue.

In a large glass pitcher, layer the ginger slices and lemon slices. Add fresh mint leaves if desired for extra flavor and digestive benefits. The layering helps infuse the water with all the flavors and nutrients.

Pour 8 cups of hot filtered water (around 160-180°F) into the pitcher with the ginger, lemon, and mint. The hot water will help extract the beneficial compounds from the ingredients. Let it steep for 10-15 minutes.
