In a medium bowl, add 0.5 cup of tahini paste. This creamy sesame base is the foundation of the dressing.

Squeeze fresh lemon juice (3 tbsp) into the tahini. The acidity helps thin the paste and adds brightness to the dressing.

Using a wooden whisk, mix the tahini and lemon juice together. Add water (2 tbsp) gradually while whisking to reach desired consistency - smooth and pourable.

Finely chop fresh cilantro and parsley. Add to the tahini mixture along with sea salt (0.5 tsp) and black pepper (0.25 tsp). Stir well to combine.

Transfer the dressing to a serving bowl. Drizzle with herb-infused oil and garnish with sesame seeds and fresh cilantro. Serve immediately with salads, grains, or vegetables.
