Cucumber Mint Raita

Whisk 1 cup of plain yogurt in a bowl until smooth and creamy. This aerates the yogurt and creates a lighter texture. The yogurt should be at room temperature for best results.

Peel 1 medium cucumber and cut it into small, uniform dice. If the cucumber has large seeds, scoop them out gently. Pat the diced cucumber with a clean cloth to remove excess moisture.

Finely chop 1/4 cup of fresh mint leaves and 1/4 cup of fresh cilantro. Use only the leaves, discarding tough stems. The vibrant green color and aromatic qualities are essential to the raita.

Add the diced cucumber to the whisked yogurt. Gently fold in the chopped mint and cilantro. Be careful not to overmix, as this can make the raita watery. The ingredients should be evenly distributed but light and airy.

Add 1/4 teaspoon of sea salt and 1/8 teaspoon of freshly ground black pepper to the yogurt mixture. If using asafoetida, add 1/8 teaspoon now. Stir gently to combine. Taste and adjust seasoning as needed.

Heat 1/2 tablespoon of pure ghee in a small pan over medium heat. Once the ghee is warm and fragrant, you will see visible shimmer and aroma rising from the pan.

Add 1/2 teaspoon of cumin seeds to the warm ghee. Allow them to toast for 30-60 seconds until they crackle and release their aromatic oils. If using green chili, add it now and cook for 10 seconds.

Pour the warm ghee and toasted cumin seeds over the yogurt mixture. Do not stir immediately. Allow the heat to gently warm the raita for a few seconds, then fold gently to incorporate the tempering.
